Because Sharing is Caring: Be Generous
Generosity. What does it mean to you? Defined as “the habit of giving without expecting anything in return”, it can involve offering time, assets or talents to help someone in need. However, through the years, the word “generosity” has often been equated with charity as a virtue; that is, a generous person is someone who donates monetary aid. When one states, “He’s so generous!” it’s quite natural to immediately assume the tone of the statement somehow involves a generous donation, offering or financial contribution.
Yet generosity encompasses so, so much more, and Canadian parents are in overwhelming agreement that raising caring and generous children is one of their top priorities. Of course, one of the easiest ways to instill a behaviour in our children is simply to model it ourselves. A Minute Maid Moments poll conducted earlier this year showed that more than half of parents demonstrate generosity through spontaneous good deeds such as shoveling a neighbours’ driveway, holding the door for a stranger, or giving gifts to friends and family including homemade art and baked goods.
This is the true definition of generosity; giving a piece of your time and talents to make a difference.
The poll also shows that an overwhelmingly high number (83 per cent) of parents want their children to show generosity, including:
• Random acts of kindness, like writing friendly surprise notes for friends and family (77 per cent)
• Offering to help neighbours in simple ways, such as carrying groceries (67 per cent)
• Acknowledging their friends /family birthdays with gestures like a phone call or handwritten card (53 per cent)
• Making gifts for others, including baked treats and homemade crafts (43 per cent)

Simple Spring Ideas: Orange-Ginger Chicken Salad
The sun is shining; the birds are singing – and the only thing on my mind is a light, tasty salad that is a tribute to the season… and maybe a remedy for the extra pounds I put on over the cold winter months. My Orange-Ginger Chicken Salad is bursting with citrus flavour and features tender, juicy Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts.
The salad is actually a great way to #loveyourleftovers; I serve baked orange-ginger glazed chicken breasts with rice the night before, and always remember to reserve two for our favourite salad the next day. The orange segments brighten the flavour and are perfectly balanced against the acidic, aromatic dressing. Enjoy!
(Day 1)
4 Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts
3 tablespoons frozen orange juice concentrate, thawed
1-1/2 tablespoons rice wine vinegar
3 tablespoons extra-virgin olive oil
1 teaspoon soy sauce
1 teaspoon minced peeled fresh ginger
salt and coarsely cracked black pepper, to taste
(Day 2)
1 package baby romaine lettuce mix
1 orange, peeled and segmented
Day 1: Whisk juice concentrate, vinegar, oil, soy sauce and ginger in a small bowl. Season dressing with salt and pepper. Set aside two tablespoons and refrigerate.
Season chicken breasts with salt and pepper. Generously brush chicken breasts with remaining dressing and marinate for 30 minutes. Bake in a shallow baking dish at 400°F for 30 minutes, or until juices run clear. Serve with with your favourite side dish, reserving two breasts for the next day’s salad.
Day 2: Toss baby romaine lettuce mix with 2 tablespoons dressing; divide into two portions. Slice chicken breasts and layer over salad greens, finishing with orange segments. Serves 2.

Dear March Break…
While it’s bad enough that I’m not on a beach right now (I can deal), and those games that I ordered for the boys got held up at the border (I can work around this)… I simply cannot… and WILL NOT… stand for 10-15cm of snow after we have “sprung forward”.

Blizzard-like conditions could make for dangerous travel in Ontario! screams the headline on The Weather Network.
“The snow will become heavy at times and continue east into the Kingston to Cornwall region through the day with total snowfall amounts of 15 to 25 cm expected by tonight,” warns Environment Canada in the statement.
Snowfall will be somewhat less from southern Lake Huron across the Greater Toronto Area to Ottawa, where up to 15 cm is possible. In addition, strong northeasterly winds with gusts up to 70 to 80 km/h could result in near blizzard conditions in some places.
“The heaviest snow is expected to fall late morning through the afternoon hours, with the strongest winds likely around 2 pm,” says Soderholm. “That means the snow will be blowing around, which could be a huge hazard for commuters.”

Warming Winter Meals: Italian Chicken Meatloaf
As a young girl, and the daughter of immigrant parents, I didn’t grow up with the “traditional” Canadian comfort foods like macaroni and cheese, chicken noodle soup, or – everyone’s favourite – meatloaf. Instead, I stared at my plate of curried chicken and rice with dismay, dreaming about the wonderful taste sensations that were advertised as electric orange pasta in a box.
Years later, as an adult, I learned how to buy chicken noodle soup in a can and make the said electric orange pasta. And then, I craved my mom’s spicy, homemade curried chicken with unmatched longing and nostalgia. Who knew – I grew up with comfort foods after all.
However, there’s one comfort food I missed out on – warm, dense, perfectly moist meatloaf. How I love meatloaf! One of the easiest made-from-scratch meals you can serve your family, it’s my favourite go-to dish when I want minimal fuss and maximum comfort factor. And for a meal my whole family gobbles up (especially the boys!) I always make my Italian Chicken Meatloaf, featuring Maple Leaf Prime Naturally Extra Lean Ground Chicken.
This recipe yields a moist, delicious meatloaf without all the fat and calories of a traditional ground beef loaf. I like to serve it with additional warmed tomato sauce, however, it’s great on its own or thinly sliced for sandwiches too. Best of all, it freezes beautifully.
INGREDIENTS
2 lb Maple Leaf Prime Naturally Extra Lean Ground Chicken
2 eggs
1/2 cup Italian-style breadcrumbs
2 garlic cloves, minced
1/2 cup onion, finely chopped
1/2 tsp each salt and ground pepper
1/4 cup shredded Parmesan cheese
1/2 cup of your favorite tomato or pasta sauce
1/2 cup shredded mozzarella cheese
parsley, for garnish
DIRECTIONS
Preheat the oven to 350°F. Lightly coat a loaf pan with non-stick spray.
In a large bowl, combine the ground chicken, eggs, breadcrumbs, garlic, onion, salt, pepper and Parmesan cheese. Place the combined mixture into your prepared loaf pan. Evenly spread pasta sauce on top of the loaf and bake in pre-heated oven for 45 minutes.
Remove meatloaf from oven and sprinkle mozzarella cheese on top. Place back in the oven and bake for an additional 15 minutes. Let rest 10 minutes before slicing. Serves 6-8.

Thai Chicken Pizza for Two
This past weekend, I set out to discover if there was indeed a way to marry my two favourite comfort foods: Asian cuisine and pizza. Normally I’ll toy around with a recipe a few times before coming up with a winner, but in the case of my Thai Chicken Pizza for Two, I do believe I knocked it out of the park on the first try.
Now I call it a “pizza for two” mainly because naan-style flatbreads are limited to about 10-inch diameters; hence, it’s a stretch to feed a family of four. However, this is easily overcome by simply making two pizzas :)
I swapped traditional tomato sauce for a nutty concoction seasoned with ginger, garlic, soy sauce and vinegar – essentially, the making of any delicious peanut stir-fry sauce. It complements the tender morsels of chicken perfectly, and makes for a very satisfying lunch or dinner.
The husband suggested that mushrooms would be a great addition, but frankly, with the complex flavours and savoury twist, I’d almost rather add chopped florets of steamed broccoli – and will be doing so next time. Also, be generous with the basil; I only used about two torn leaves, but have upped that number to four in my recipe. …

You Only Live Once: Doughnut Bread Pudding
Of course, repetitive consumption of the following dessert will absolutely shorten your life span, but for that reason, we’ll just file this one under “Things To Try Before You Die”.

When life gives you stale doughnuts, make doughnut bread pudding! Well, that’s what Stephen Collucci, pastry chef at Colicchio & Sons restaurant in N.Y.C., would do. In his new book Glazed, Filled, Sugared & Dipped, Collucci uses day-old doughnuts in place of plain bread to create an extra-decadent riff on the dessert classic. He, of course, makes his fried rings from scratch, but the recipe is built for using store-bought leftovers.
“Bread pudding is a surefire crowd-pleaser and a great way to make use of bakery items that would otherwise be destined for the trash bin,” Collucci says. “While this recipe calls for basic cake doughnuts, it’s entirely open to customization: You can use any doughnuts you wish.”
The trick to navigating through this recipe with success is to not snack on the day-old doughnuts as you assemble them for the pudding. If you can manage to curb your craving, you’ll be well on the way to having a crowd-pleaser on your hands.

INGREDIENTS
2 cups heavy cream
2 cups whole milk
¾ cup sugar
1½ tablespoons vanilla extract
¼ tsp salt
4 large eggs
3 large egg yolks
10 leftover cake doughnuts
DIRECTIONS
Preheat the oven to 300°F. In a medium saucepan set over medium heat, combine the cream, milk, sugar, vanilla, and salt and bring it to a simmer.
Meanwhile, in a separate medium bowl, whisk together the eggs and egg yolks until smooth. Once your pot has reached a full simmer, slowly pour half the cream mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and remove the pan from the heat. Let the mixture cool. Strain the custard through a fine-mesh sieve and set it aside.
Tear the doughnuts into thimble-size pieces and arrange them tightly in a round baking dish that’s about 7 inches in diameter or in an 8 × 8-inch baking dish. Pour the custard over the doughnut pieces, filling the dish just so that the doughnuts are barely covered. Let sit for 10 to 15 minutes so that the doughnuts absorb the custard.
Bake the pudding until the custard is fully set in the center, about 50 minutes. Serve immediately.
Make It Tonight: Easy Salmon Cakes
Sometimes, you just don’t give a damn.
Take last night; I wasn’t up to cooking dinner – nor was I craving takeout. And even though we had just completed a full run of grocery shopping, there was “nothing to eat” (of course). To top it all off, I had a million things to do, and absolutely no motivation to begin. Yup, it was one of those nights.
Thankfully, inspiration struck as I opened the pantry and spotted a tin of Sockeye Salmon. If this isn’t a staple in your home, you are denying yourself a quick, 10-minute meal on Sunday evenings when you just don’t care. Because in less time than it takes to root around for the takeout menus, you can create a hot, flavourful meal your whole family will love. (Alas, my two little guys were full to the brim from eating barbecued corn on the cob – and who could blame them? – hence, it was only a table for two last night.)
So, I grabbed a few items from the pantry and fridge, and 10 minutes later – voila! Easy Salmon Cakes, à la Lena.
1 large can Sockeye Salmon, drained and broken into small chunks
1 tbsp mayonnaise
1 green onion, finely chopped
1 egg, lightly beaten
1/2 cup Italian breadcrumbs
1/2 tsp seafood seasoning, or to taste
1/2 tsp lemon juice
1 cup Panko breadcrumbs
oil, for pan frying
In a large bowl, mix salmon, mayonnaise, green onion, egg, Italian breadcrumbs, seafood seasoning and lemon juice. If mixture is too wet, continue to add Italian breadcrumbs slowly. Form two patties; slightly flatten tops and roll in Panko breadcrumbs.
Heat oil in large pan on medium heat. Fry salmon cakes until just browned, about 8-10 minutes, turning once.
We cheated and made a risotto from a box mix (I recommend PC Splendido) as a side – hey, remember, this was an I-don’t-give-a-damn night. Surprisingly, it was quite delicious, and a great accompaniment to the Salmon Cakes. My recipe serves 2, but can easily be doubled for a family of four.

Notice a trend? YES, I love a good sandwich. In fact, I can say with confidence that the humble sandwich is my favourite kind of food in the entire world. And certainly, a worthy last meal if I was leaving said world. Bread, bread, bread. Carbs, carbs, carbs. Comfort, comfort, comfort.

From Drab to Fab in Minutes with Club House!
We’ve all been there before.
The fridge is near-empty (really should have done that grocery run).
The freezer is full of food you don’t have time to thaw (here’s where planning ahead comes in handy).
And… it’s dinnertime. (D’oh.)
Normally, I’d be reaching for a dial-a-dinner takeout menu in a flash, but last night, I decided it was time to get creative. On hand: an onion, a red pepper, garlic, frozen mini Italian sausages, and the cure for drab dinners: Club House Flavourful Recipe Mixes. The little flavour packets contain a medley of complementary dried herbs and spices, with no trans fat, artificial colours or flavours and no added MSG. They’re all you need to throw together a quick meal with maximum flavour! For tonight’s occasion? I thought the Lemon Thyme Pork Flavourful Recipe Mix would highlight the flavour of the mini sausages perfectly.
Here’s what I did: I sautéed the onion, red pepper and garlic in a little olive oil until just softened. Then, I threw in the frozen mini sausages – they were fully cooked, so just needed reheating. Finally, just as the sausages started to warm through, I added about two teaspoonfuls of the Club House Flavourful Recipe Mix. The citrus notes gave just the right amount of bright, savoury flavour, and the rest of the herbs cooked down with the onions and peppers to create an Italian-inspired saucy mixture….
Could it Be? The Homemade “Lena Burger”?
Alas, nope. I am SO sad right now. Satisfied, but sad.
Here’s the scoop: this past weekend, my husband joyfully announced that he had found a recipe online that claimed to be a dupe of Harvey’s hamburgers. Mmm… Harvey’s. Flavourful, juicy beef… charbroiled to perfection on an open-flame grill… yes, it’s a beautiful thing.
Gleefully, he sent me a link to the site – a Canadian food blog, holla! – Kalofagas.ca.
(In Greek, Kalofagas means “Gourmet”.)
Since the photo posted by Chef Peter Minakis (see right) immediately had us wanting to reach through the computer and take a bite, I happily conceded that this recipe was indeed a must-try. And since the good Lord had bestowed a sunny, beautiful day for my birthday last week, I decided to celebrate by passing the mealtime responsibilities to my resident grillmaster.
Of course, I did help with the prep-work; thanks to a very simple recipe incorporating easy-to-find, staple ingredients, the burgers were ready for the flame in about 5 minutes (though we did rest them for an hour in the fridge, as suggested). The verdict? While the final product was a tasty, über flavourful and incredibly moist burger, it just was not a homemade “Lena Burger”. Close… but no Harvey’s.

Reno-cation: Main Bathroom
My Reno-cation wrap up continues with my main bathroom. This was perhaps one of the hardest rooms to makeover, specifically because:
a) It was orange before. Yes, orange. Like a bright, happy, Home Depot orange.
b) I liked it orange.
c) No one else liked it orange.

(In case you’re wondering, that’s a storage case filled with beauty products to review. I don’t actually own that much makeup!)
Alas, there was no middle road for this bathroom – visitors either loved it or hated it (curiously, those who vehemently disliked it were generally born before 1960. Just sayin’.) So when it came time for a reno-cation, I grudgingly agreed that it would be best to grab a more bathroomy colour from PARA Paints. A soothing mint green, anyone?
