Need a little Meatless Monday dinner inspo? Crispy Tofu Satay with Spicy Peanut Dipping Sauce is always in our rotation! The marinade and sauce are so simple to make, and the best part is, you can’t really mess up when it comes to putting this recipe together. No, really – it’s almost completely foolproof and absolutely delicious!
Here’s what you’ll need for the tofu satay:
1 block firm tofu
2 tbsp light soy sauce
1 tbsp creamy peanut butter
1 tbsp brown sugar
1/2 tsp dried basil
And for the dipping sauce:
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp brown sugar
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp red curry paste
1/4 cup coconut milk
1/4 cup creamy peanut butter
To make the marinade, whisk all the ingredients together. Press the tofu between two clean cloths to remove most of the moisture, then cut the block into six even strips. Spoon the marinade onto both sides of the tofu and let sit for about an hour. Bake in a 425°F heated oven for 30 minutes, turning once halfway through.
To make the dipping sauce, mix all the ingredients in a saucepan over medium heat until just about bubbling. Transfer to serving dish.
Remove the tofu from the oven and let it cool for a few minutes before skewering. Garnish with fresh cilantro and green onions, if desired. Enjoy!
