Spring 2020 is unlike any we’ve ever known. (Understatement, right?)
My son was recently assigned a writing task where he was asked to detail “positive effects” of staying safe at home. After spending time brainstorming, he presented a list to me – and at the top:
“I’m spending a lot of time cooking with my mom.”
Be still my heart! It’s no surprise that many Canadian families are rediscovering their love for home-cooked meals – and reveling in the bonding that comes with it – while we stay home. Since my boys now eagerly join me during meal prep, I’ve made it a priority to try nutritious recipes that keep them entertained and egg-cited about cooking!
I’m a huge fan of Burnbrae Farms’ convenient egg innovations products, and lately, I’ve been turning to them more than ever to amp up our dishes! They make meal prep easy, fun and less messy, which helps get the kids involved and inspires them to stretch their creativity in the kitchen.

MEXICAN BRUNCH BOWLS
At our house, it’s all hands on deck when it comes to weekend brunch. I make sure to start with a variety of healthy ingredients and then let the boys choose their favourites, assemble their meals and of course, help with the clean up!
These brunch bowls have two staples – your favourite Mexican-style rice, and egg white rounds made from Naturegg Simply Egg Whites from Burnbrae Farms.
What are “egg white rounds?” They’re quite honestly the easiest and most delicious way to enjoy protein-rich egg whites! Simply pour Naturegg Simply Egg Whites into a greased muffin pan about 1/3 of the way full, season with salt and white pepper, and bake at 400-degrees F for 15-18 minutes. You’ll have perfectly round, perfectly crispy egg white rounds to add to salads, sandwiches… or brunch bowls!
Naturegg Simply Egg Whites are a good source of high-quality protein, come in a ready-to-go carton with no mess required… and no need to toss out the yolks!
Next, to assemble your Mexican Brunch Bowl, simply start with a layer of rice, and then top with eggs white rounds and your favourite brunch fixin’s. Some ideas are:
– Sautéed baby spinach, mushrooms or peppers
– Roasted sweet potatoes
– Red beans, black beans or chickpeas
– Sliced avocado or guacamole
– Cherry tomatoes
– Shredded cheese
– Green onions and/or cilantro
Are you hungry yet? I could have this brunch bowl every day of the week!
OPEN EGG-FACED SANDWICHES
Here’s a simple lunch idea that speaks to the kid in all of us – egg-faced sandwiches, featuring Burnbrae Farms EGGS2go! They’re hard boiled to perfection and peeled (so helpful for kids who may lack the dexterity to handle peeling) and you’re assured perfectly cooked yolks – which aesthetically, definitely speaks to me!
They are SO easy to make, all you have to do is draw a little inspiration from the faces you see above! The best part? There’s no “right” way to make an animal face; simply use the ingredients you have on hand, and don’t forget to let the kiddos judge the best attempt!
To get my boys involved, I ensure that they help to make the egg salad and supervise carefully as they slice the EGGS2go! for the “eyes”.
I found inspiration for the faces from Burnbrae Farms Kid-Friendly Open Faced Sandwiches, and of course, good ol’ Pinterest!
Good to know: Burnbrae Farms’ prepared egg products are made with the same delicious shell eggs you have come to know, they just require less time and effort so you can easily incorporate them into your daily routine and of course, kid-prepared dishes.
I mean, are these not TOO CUTE to eat? (Spoiler alert: we ate them all.)
There’s never been a better time to break out of your shell! Get the kids in the kitchen this spring and try these simple kid-friendly dishes.
