Mint, Honeydew and Avocado Smoothie

Need an afternoon pick-me-up? Instead of reaching for another coffee, try this Mint, Honeydew and Avocado Smoothie! Take half a honeydew melon and three ripe avocados. Seed, cut in chunks and toss into a blender, adding mint syrup (recipe follows) until desired consistency is achieved. Garnish with mint leaves. Enjoy!

A moderate fat diet that includes one fresh avocado daily may help your body absorb nutrients from other foods and lower cholesterol. More than 75 percent of the fat in avocados is considered “good” fat, with 3g coming from monounsaturated fat and 0.5g from polyunsaturated fat (per 1-ounce serving).

Okay, back to the recipe. To make that mint syrup, you’re going to need to boil one (1) litre of water. Grab four (4) mint sprigs and separate the leaves from the stems. Weekend Eats: Shrimp, Arugula and Avocado Flatbread

From my friends at Avocados From Mexico, here’s the perfect light, summer-fresh meal that you can enjoy this weekend. Try this Flatbread with Grilled Red Peppers, Shrimp, Arugula and Avocado. Bonus – it can be grilled on the barbecue!
LG-pain-plat-avocat-EN1 naan flatbread
60 ml commercial Alfredo sauce
1 grilled red pepper, sliced into strips
15 ml olive oil
5 raw shrimp, peeled
1 avocado, quartered
A few arugula leaves
Fleur de sel and fresh pepper to taste
½ grilled lemon

Brush the bread with the Alfredo sauce. In a skillet over high heat, sauté the shrimp in the olive oil and arrange on the bread. Add the red pepper slices. Bake in a 300˚F oven for 5 minutes. Add the avocado pieces and arugula leaves. Season and drizzle olive oil over top. Serve with grilled lemon.

CHEF’S TIP: Garnish with grated cheese and top off with a few slices of smoked salmon. …

Happy Cinco de Mayo!

It’s Cinco de Mayo!

This year, I’m so pleased to team up with Avocados From Mexico. In fact, you could call me the Avo Whisperer. All year, I’ll be sharing the best recipes featuring – you guessed it – Avocados From Mexico, in addition to party ideas, nutrition facts, meal inspiration and more. And today, I’m excited to let you in on a little secret… a recipe for the BEST GUAC you’ll ever have!
carnivale-guacamole-788x440Here’s what you’ll need to whip up a batch of this delicious spread:

5 Hass Avocados from Mexico, cut into medium chunks
3 roma tomatoes, seeded & diced
1 serrano chili, finely diced
3 tbsp garlic chopped
1/2 cup cilantro, chopped
1 lime, juiced
3 tbsp olive oil
sea salt season to taste

Halve Hass Avocados and remove seeds. Cut into medium chunks (about a half inch thick) inside the Avocado shells, then scoop into a bowl with a spoon. Add remaining ingredients and mix well. (Don’t mash it into a paste; leave somewhat chunky.) Season with salt and taste, then mix a little bit more to combine thoroughly. Pair with corn chips.

All ingredients can be adjusted to suit your taste! We use non-traditional lemon juice instead of lime juice, because I’m a fan of the milder flavour. I’m talking about Avocados from Mexico, of course!
