Cracker Crusted Salmon: Dinner Made Better

Fair warning folks: there’s deliciousness ahead. The kind that comes when you combine a crispy, savoury coating with fresh Atlantic salmon. It’s gluten-free and guilt-free goodness.
DSC_0718Last year, a friend sent me one of those tongue-in-cheek eCards, which portrayed a profile of a woman crying, stating –

“I’d do anything to lose 10 pounds, except eat well and exercise.”

At the time, I chuckled – I mean, yeah, it pretty much summed up my life! – but when my clothes started to get a bit too snug, it was no longer a laughing matter.

So I changed things up. And I didn’t lose 10 pounds… I lost 20! And now, at my goal weight, there’s nothing I’d like to do more than keep it off.

Hint: I won’t be joining a gym any time soon.

Which means that I have to settle for what’s behind door number two: eating well. And you know what? Making healthy, better-for-me choices is not the hardship I thought it would be – especially with a wealth of waist-friendly and alternative-diet options on the market, including Breton Popped! Beans cracker chips.
DSC_0715Love Breton? Who doesn’t! It’s been a wholesome family choice since 1982. And now, even more people can enjoy the tender-crisp texture and wholesome taste of the original Breton. Introducing two NEW gluten-free options: Breton Bean crackers (in White Bean with Salt & Pepper and Black Bean with Onion & Garlic) which provides 3g of fibre and 2g protein per serving and Breton Popped! Beans cracker chips (in Sweet Chili Cheddar and Sea Salt & Pepper). Stamped with their ‘Made Better’ promise, these healthy snacks have no preservatives or artificial flavours/colours and beans are the #1 ingredient! 

(Yes, I ended that sentence with an exclamation point. No, I can’t really explain why I’m so excited about beans. But trust me on this one – you’ll LOVE Breton Popped! Beans cracker chips. Not only are they delicious; they’re certified gluten-free by the Canadian Celiac Association.)

In addition to being made with a blend of chickpea and red bean, Breton Popped! Beans cracker chips have 2g fibre and 2g protein per serving. The kids love them as an after-school snack, and I’ve been known to tuck into the box late at night. And they’re so versatile – I’ve even found a way to enjoy them with dinner! Here’s an easy make-it-tonight recipe for Cracker Crusted Salmon. I threw this recipe together in a pinch – and couldn’t be happier with the result!

(Bonus: Pounding crackers until they’re crushed? Instant stress reliever.)
DSC_07081 large salmon fillet, cut into 2.5-inch portions
½ cup Breton Popped! Beans Salt & Pepper, crushed
2 tbsp grated Parmesan cheese
¼ tsp garlic powder
¼ tsp dried parsley
pinch cayenne pepper (optional)
2 tbsp butter, melted

Preheat oven to 400°C. Lightly grease a baking dish with olive oil or non-stick spray.

Mix crushed Breton Popped! Beans Salt & Pepper with Parmesan, herbs and spices. Stir in melted butter until just combined.

Press mixture firmly onto tops of salmon portions. Transfer to baking dish and bake for 20-25 minutes, depending on the thickness of your filet. Remove from oven; add a squeeze of fresh lemon juice, if desired. Serves 4.

    Good idea to smash up the Breton Crackers and use them as a coating. Mind you I might have to try it on chicken since we are not fish fans in this house.

    mmm that looks so good!! i need to eat fish more because i don’t eat it enough. I am so picky with the fish I eat but love salmon so i will give this a try :)

    Every day I nom nom on my Breton Gluten Free Original with Flax crackers, they are like finding the pot of gold for me. As a sufferer of Celiac Disease, I get very excited when the larger food companies venture out into the gluten free land! Now, I can look for Breton Popped and try a few recipes of my own!
