Precision Makes Perfect: the Breville Sous Chef 16 Peel & Dice

Fast. Versatile. Precise. Exactly how I like my food prep – and exactly how I like the small appliances handling my food prep to perform. Because I am usually time-starved, often caught in a rut, always cooking in batches and mostly dying to get out of the kitchen. What I really need is a sous chef, or something that perfectly – no, precisely – mimics one.

Introducing the Breville Sous Chef 16 Peel & Dice.
The Breville Sous Chef 16 Peel & Dice is one of the most revolutionary machines I’ve ever had the pleasure of reviewing. It peels, dices, slices, mixes and chops in half the time of doing it by hand – and without any of the hassle. Its extra wide chute is designed for every shape of food, so you no longer need to chop your ingredients into smaller pieces before letting the appliance do the work. (I’ve always felt that pre-cutting foods completely defeats the purpose of using a food processor – wouldn’t you agree?) Aside from saving time and speeding up your meal preparation, the machine’s precise cut leads to even and consistent cooking and perfect textures. 

Who needs the Breville Sous Chef 16 Peel & Dice? Admittedly, not everyone. The feedback I’ve received from previous small appliance reviews has let me to be very forthright and conscientious when it comes to recommending products. If you live on your own, rarely cook for a crowd and aren’t into canning, preserving or baking, this may be “too much machine” for you. You’ll also have to be open to washing more dishes than say, a simple paring knife. (Most of the removable parts are dishwasher safe.) Finally, I would be remiss to not mention the cost; at a suggested retail price of $699.99, you’ll need to be absolutely sure that you’ll use the small appliance to its full potential.

However, here’s where it becomes worth the investment.

1. Entertaining. If you regularly cook for a crowd, you know just how taxing food prep can be – especially if the dishes require uniform chopping, slicing or dicing. With 8, 12 and 16 mm dicing disc sizes, the dicing attachment works by slicing and then dicing your foods. This two-step process quickly transforms vegetables and fruit into salsas, salads and preserves.

2. Craving Change. If you’re starved for time and tired of the same old/ same old, sometimes all you need is a helping hand and a little inspiration. The Breville Sous Chef 16 Peel & Dice can motivate you to try new dishes without added time and frustration because most of the prep work is done for you. In fact, with 10 attachments, every element in all the meals you make can be prepared with ease. Roll pizza dough, mince your own burger patties and create the perfect accompaniments – all in one machine.

3. Cooking from Scratch. Love homemade french fries? Mmm… we all do! And guess what? Peeling doesn’t have to be painful. The peeler disc can peel 7 potatoes in as little as 15 seconds, taking the hard work out of preparing ingredients. Once peeled, simply load the julienne disc and feed the potatoes through the extra large chute. Pro tip: air fry your potatoes in the Breville Smart Oven Air for a delicious snack or side dish with less fat!

We recently put the peel and slice features to the test; considering it normally takes me anywhere from 6-10 minutes to peel and slice potatoes for french fries – haphazardly and grossly mismatched, at that – I decided that if my time could be reduced by at least half, it would win a place in my kitchen.
First, we loaded washed, whole potatoes onto the peeling disc. We set the machine for 25 seconds (the recommended time is 20 to 25 seconds, but honestly I had my doubts) and that’s about it.

Yes, it’s that simple.

When we checked on the potatoes after 25 seconds, I let it pulse for another 10 seconds because I was particular about the tiny spots of skin left behind. Now if I had been making french fries, this would not have bothered me in the slightest. However, since I wanted to show you just how well the potatoes can be peeled, I pressed on until near perfect. Now tell me: when was the last time you peeled four potatoes in 35 seconds?
The best part? No more food waste than peeling potatoes the traditional way; in fact, I’d reckon that I saved even more of the potato flesh with the Breville Sous Chef 16 Peel & Dice.

Next, it was time to switch to the Julienne & French Fries Cutter blade. Just as simple, friends, and just as quick! After pushing each potato through the extra large chute, in less than 60 seconds, we had perfect, uniformly cut french fries. To be fair, I’m adding in the time it took to switch blades; perhaps 30 seconds. That means I was able to prep four potatoes into shoestring fries in about two minutes. Sweet (er, savoury) success!

    Wow. The potato peeling and julienne convinces me. I also cook in batches for big family get togethers and surprise group visits. Soups and stews would be much easier on my husband than than his dicing hand. When I think of all the carrots I cut for little ones….argh! Where were you Breville? Well, you are here now.     I like to do a big prep every few weeks and chop/dice the celery, onions, peppers, etc I will need for recipes. It can be time consuming and I think this would help save some time…and would help me convince DD to help.

    This is the food processor I was having my eye on. My food processor recently broke. I miss it so much! Especially for shredding cabbage and slicing carrots. But French fries sound wonderful too!!

    My favourite Polish dish, Potato Salad, which requires you to dice potatoes, eggs, carrots, apples, onions, and pickles. It takes so long to complete and I usually pass on the cravings because of all the work.

    Wow! I would use this amazing machine to make relish, salsa, soups and stews. If it can peel apples as well as it does potatoes, I would also use to make apple sauce, apple butter and perhaps a few apple pies!

    I will be using this whenever I am peeling potatoes as my dad used to comment I was the only person he knew that ended up with square potatoes when peeling. Plus I love homemade fries so this Breville Sous Chef is perfect for me.

    Wow! I can only imagine the possibilities. I have arthritis in my hands which limits my ability for mixing and cutting some days. I would love help with making dough, chopping veggies for soups and stews, french fries, veggie sticks, etc etc

    I really don’t like potatoes for one reason…. Peeling them! I have started buy the baby potatoes as I can get away without removing their peels. This would be a game changer for me!

    If you have ever made perogies: peeling potatoes & chopping for boiling. Mashing potatoes, shredding cheese & then making the dough. All so time consuming. Wow this would be awesome to prepare my large batch fir Christmas Eve.

    I’ll use this to prepare dinner after a long day at work. I’m up at 4:30 in the a.m., a one hour commute to work, an 8 hour word day, and coming home traffic is heavier so it’s more likely to be 1 1/2 hours to get home. I want this machine to do everything for me cause I’m too tired to do it myself.

    I will use the Breville Sous Chef 16 Peel & Dice in all sorts of ways…but mainly for making my keto meals, shredding/chopping/mixing ingredients…and it will make my life SO MUCH EASIER! I can see myself using it to make ‘cauliflower rice’, mix up keto friendly doughs, shred Parmesan cheese to make Parmesan crisps, shred cabbage for homemade sauerkraut…but I’d also use it to make food for my family, who are not keto. I mean…that potato trick is pretty darn nifty! Making french fries is always better than buying them…IMHO.

    Oh my goodness! How have I not heard of this until today?!? I make homemade meals almost every dinner. I have an itty-bitty mini food processor chopper thing that I got 12 years ago (back when my family was just my husband and me) but it only has one setting. This would save me so much time and make dinner prep a lot less of a hassle. I would use it for fries, chopping veggies for sauces and stews, and for so many other things!
