The Most EGGcellent Time of Year

There’s no doubt about it: In the summertime when the weather is hot, I’ve got the outdoors on my mind. In fact, I’d rather be anywhere than cooped up in the kitchen – so I take the kitchen outside.

Hadn’t pegged me for the “roughin’ it” kind of girl? Well, who said anything about roughin’ it? Indoors or outdoors, it all comes down to one thing: good food. Forget hot dogs on the grill – my idea of a portable meal is my famous Camp Fried Rice.
Never thought of making fried rice on the go? Let me blow your mind.

First, it’s an easy way to create a filling, flavourful meal while breaking away from the traditional picnic/ barbecue-style foods. Using a combination of ingredients that can be prepared up to 2 days in advance, plus shelf-stable and frozen goods, it’s a breeze to make – and who doesn’t love a little takeout-style meal when dining under the sun? Here’s how it comes together. 
Pre-cooked rice. Load up a large, resealable container with cooked long-grain rice. It will stay fresh in the cooler for about 2 days.

Pre-cut veggies. Chop up your favourite veggies like peppers, carrots and green onions and place them in a zipper-style freezer bag. Before closing, cover veggies with a barely moist paper towel to ensure they do not dry out.

Canned goods. Using shelf-stable products – like canned shrimp – greatly decreases the risk of food contamination when cooking outdoors. Don’t like shrimp? Try canned, flaked chicken or omit the meat completely and go for a delicious vegetarian fried rice.

Frozen EGG Creations. Of course eggs are a staple in fried rice, but transporting them to the campfire can be an exercise in futility. EGG Creations to the rescue!
Burnbrae’s EGG Creations are an excellent source of protein and a source of Omega-3 polyunsaturates. EGG Creations are made from real eggs and are available in two varieties; whole eggs or simply egg whites (which is cholesterol and fat free), with one distinct advantage: they are effortlessly portable and can even be frozen! That’s right – a carton of EGG Creations doubles as an ice pack for your cookout adventures. Talk about a hero product! Simply thaw in your cooler overnight and it will be ready to use!

The Flavourings. In a small, air-tight jar or container, mix 1/2 teaspoon of sesame oil with 1/4 cup of soy sauce. Close tightly – there’s no need to keep this mixture cool. Add to fried rice to taste! In a separate small container, add about 2 tablespoons of vegetable oil. (You could simply take along a cooking spray, but I prefer to go the extra step for a more authentic taste.)

Cooking the Camp Fried Rice is so simple!

First, heat vegetable oil in a wok or large skillet placed directly on a barbecue grill, over coals or open flame. Add chopped veggies and stir fry until just soft. Then, eyeball about 1/2 cup of EGG Creations, adding to the wok and stirring quickly to break the eggs into small pieces.
Drain canned shrimp and add to the wok mixture, topping with cooked rice and sesame/soy mixture, to taste. Stir well to combine.

Et voila! Delicious, flavourful fried rice that is definitely a breakaway from the ordinary! Whether you’re cooking for family, foodies or a family of foodies, everyone will dig in. The recipe can be adjusted to make as many servings as you please, and since there’s a low risk of food spoilage, you can cook it again and again.
Don’t forget to use the remainder of the EGG Creations for breakfast the next day! Scrambled eggs on the grill is life.

    I love cooking outdoors. Did some camping a few weeks ago and my kids were lucking enough to go fishing with their uncle and they came back with some beautiful cutthroat trout which we fried up for breakfast. I’m going to try your fried rice idea. Looks great.
