A Recipe for Happiness: CHIPITS + Christmas

Bake on, friends, bake on.

This holiday season, don’t worry if you don’t have an arsenal of Christmas-themed recipes. (Although you could try my Santa Baby! Bars. Super easy!) Don’t worry if you’re not a domestic goddess; if you don’t have coordinating tableware or if your home is only half decorated. There’s only one thing I want you to do: grab an apron, a cookie sheet (or pan) and a few staple ingredients. And bake on.

Bake delicious chocolate chip cookies or decadent brownies. Know that regardless of the time of year, comforting homemade goodies are always perfect for the occasion.
20161203_111345Recently, we attended the Lakeshore Santa Claus parade in Etobicoke. It was a nice change from the hustle and bustle of downtown Toronto’s parade; here, there was a feeling of community, and many of the floats included local residents, businesses and of course, children. We staked out a great spot along the front of the route, and my boys had a wonderful time taking in their favourite floats and characters. 

Not long after we were there, I spotted the cheerful, yellow CHIPITS truck. There, good folks were sampling freshly baked cookies and brownies, featuring CHIPITS Milk Chocolate and Semi-Sweet Chocolate Chips. YUM!
img_3858-220161203_111524Now I’ll admit, it’s been a while since I’ve had a freshly baked comfort food. Sometimes, I get wrapped up in the “extra-effort-Pinterest-worthy-perfect-mom” mentality, and forget that life’s simple pleasures are always the best. And these freshly baked cookies and brownies were ah-mazing.
20161203_11131120161203_111549img_3852-2“Why don’t you make these at home?” my 8-year old asked. I didn’t have a proper answer for him. I mean, was I supposed to admit that I spend more time worrying about what photographs well – than what they would love? It’s my turn to grab an apron and bake on.

(By the way, I’d say these cookies photograph just fine, wouldn’t you agree?)
20161203_115502Take a deep breath. If you’re spending too much time online, struggling to find the perfect Christmasy treats, I encourage you to get back to basics. Because it’s the taste that counts.

CHIPITS Chewy Milk Chocolate Cookies Recipe

2/3 cup melted butter (150 mL)
2 cups lightly packed brown sugar (500 mL)
2 eggs (2)
2 tbsp hot water (30 mL)
2 2/3 cups all-purpose flour (650 mL)
1 tsp baking powder (5 mL)
1 tsp baking soda (5 mL)
1/4 tsp salt (1 mL)
1 2/3 cups CHIPITS Milk Chocolate Chips (270 g)

1. Heat oven to 375°F (190°C).
2. In large bowl, beat melted butter, brown sugar, eggs and hot water until smooth.
3. In medium bowl, mix together flour, baking powder, baking soda and salt. Stir into butter mixture until blended.
4. Stir in milk chocolate chips. Drop from small tablespoon onto ungreased cookie sheet.
5. Bake 8 to 10 minutes. Let cool 1 minute; remove to wire rack.
Makes 5 dozen cookies.

    I found out you can’t replace CHIPITS Milk Chocolate Chips with any other chcolate chip,it just ruins the cookie!
