Let’s cook with love: here’s what you’ll need to make my Wild Mushroom Risotto.
6 cups chicken broth
2 tablespoons olive oil, divided
1 cup shiitake mushrooms, sliced
1 cup cremini mushrooms, sliced
2 large shallots, finely diced
1-1/2 cups Arborio rice
1/2 cup dry white wine
2 tablespoons butter
1/2 cup freshly grated Parmesan cheese
2 tablespoons parsley, chopped
In a medium stock pot, heat broth until it comes to a simmer. Reduce to low.
In an Everything Pan, warm 1 tablespoon olive oil over medium heat. Add mushrooms and stir until soft, about 2 minutes. Remove mushrooms from pan and set aside in a bowl.
Add remaining 1 tablespoon olive oil to the Everything Pan. Add shallots and cook until softened. Add rice; cook and stir until rice begins to turn golden, about 2 minutes. Add wine and stir the mixture constantly until the liquid is fully absorbed.
Working in batches, add 1/2 cup broth to the rice, stirring constantly, until the broth is absorbed. Continue adding broth, 1/2 cup at a time, until the liquid is absorbed and the rice is tender yet firm to the bite, about 20 minutes. Season with salt and pepper.
Remove Everything Pan from heat. Stir in mushrooms, butter and Parmesan cheese. Top with chopped parsley; serve immediately. Makes 4 servings.
