A sweet twist on a summer classic – Strawberry Caprese Salad with Toasted Walnuts is sure to become a new favourite! It’s so simple to put together and combines peppery arugula with delicate, fresh local mozzarella (often referred to as bocconcini).
Dairy is a staple ingredient in our fridge, and it’s a key ingredient in so many of our go-to recipes – including the cheese used in this salad! Bocconcini is mild-tasting, creamy, and pairs perfectly with sweet strawberries and crunchy walnuts. If you’ve been looking for a new salad to add to your outdoor entertaining menu, this is it! Here’s what you’ll need:
1 package (142g) arugula
1 cup Ontario fresh mozzarella, sliced
1 cup Ontario strawberries, sliced
1/2 cup walnut pieces, toasted
2 tbsp fresh basil, chopped
1/4 cup olive oil
1 tbsp honey
2 tbsp balsamic vinegar
salt and pepper, to taste
In a small bowl, mix olive oil, balsamic vinegar, honey and salt and pepper. Set aside.
In a large bowl, add arugula, fresh mozzarella, strawberries and chopped basil. Toss gently with dressing. Arrange salad on a plate and sprinkle with toasted walnuts. Makes 4 servings.
