It’s one of my favourite meals from my childhood and today, my mom joined me in the kitchen! A popular street food in India, bhurji features savoury aromatics combined with smooth, delicious scrambled eggs.

This recipe serves two (perfect for my mama and me).
4 Conestoga Farms Free Run Omega 3 Eggs, beaten
2-3 tbsp vegetable oil
1/2 large white onion, chopped
2 Roma tomatoes, chopped
1 green chilli, chopped
1/4 teaspoon turmeric
1/4 cup cilantro, chopped
salt to taste
In a frying pan over medium heat, add vegetable oil. Add chopped onion and sauté until soft, about 2 minutes. Add green chilli and fry for an additional minute, followed by the chopped tomato. Add salt and turmeric. Sauté for 3-4 minutes.
Add eggs to the pan and gently scramble the mixture. Just before the eggs set, add chopped cilantro and continue to stir until fully cooked. Serve immediate with naan.
