Easy, Natural and Versatile Dinners… #MadeLikeHomemade!

Last night, I made:

1. The most delicious enchiladas, like, ever…
2. Featuring savoury slow roasted turkey…
3. In less than 30 minutes…
4. And the entire family gobbled them up.

Think it’s an impossible task? Break out your grocery list app, honey, because I’m going to show you exactly how to do it – and I’m going to blow your mind, too. Here’s what you need to do.
1. Make your own enchilada sauce. First, it’s almost impossible to find it in mainstream grocery stores, and second, it only takes seven minutes from start to finish. Plus, if you love Mexican-inspired dishes, I promise you’ll already have all the ingredients on hand. 

1/4 cup olive oil
2 tablespoons all-purpose flour
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground pepper
680ml can tomato sauce
1 teaspoon apple cider vinegar

Add olive oil to a medium saucepan and warm over medium heat. Mix all dry ingredients in a small bowl; when the olive oil is hot, add the spice mixture to the saucepan, stirring constantly. Cook for about 2 minutes to remove the “rawness” from the flour. Add the entire can of tomato sauce, re-seasoning with salt and pepper if necessary. Stir the mixture frequently and continue cooking for 5 minutes. Remove from heat; stir in apple cider vinegar. Set aside.
2. Preheat oven to 350°F. At this point you may be asking, How on earth is this a 30-minute meal? Where’s the slow roasted turkey, Lena?

Turkey, water, vinegar, salt, sugar, onion powder, garlic powder, rosemary extract, white pepper.

I love turkey but I’ll be honest – unless I have leftovers following a holiday, it’s just not something I have in my house. With Maple Leaf Natural Selections Slow Roasted Shredded Turkey, I have an everyday healthy and easy meal solution. It’s perfect for busy weeknights when I need to get dinner on the table in a flash! Since discovering the shredded turkey, we’ve purchased it three times – and can’t wait to try Maple Leaf Natural Selections Slow Roasted Shredded Chicken and Maple Leaf Natural Selections Slow Roasted Shredded Pork, too!
Back to my enchiladas.

3. While the oven is preheating, mix one package of Maple Leaf Natural Selections Slow Roasted Shredded Turkey with about a half cup of enchilada sauce. Now it’s time to assemble the enchiladas! You’ll need:

– corn or flour tortillas
– shredded cheese (Monterey Jack or a Mexican cheese blend work well)
– sliced green onions, chopped cilantro and sour cream, for garnish
– a baking dish

Spread a thin layer of sauce in the baking dish. Then, on a separate plate, add a heaping tablespoon or two of the shredded turkey mixture onto a tortilla. Roll and place into the baking dish, seam side down.
Once you have rolled all the tortillas (one package of Maple Leaf Natural Selections Slow Roasted Shredded Turkey makes six medium-sized rolls), spoon a generous amount of enchilada sauce on top, followed by a handful of shredded cheese.

The wonderful thing about this recipe is that you control the calories; I used less than a cup of reduced-fat shredded cheese for the entire dish, and turkey is always a better-for-you option. Health-wise, this meal is a win!
Place enchiladas in a pre-heated oven and bake for 15 minutes. Remove from the oven and garnish with your favourite fixins. In addition to sliced green onions, chopped cilantro and sour cream, you could also try pickled jalapeno slices or diced red pepper!

Serve warm with a green or bean salad. Yum!

    Your enchiladas look so good! So of course I’ll use the Maple Leaf shredded turkey to try that recipe. They also look like they’d be great to add to a kale salad or leftover pasta for a quick workday lunch or on a night when I just don’t feel like cooking.
