As the days get shorter and the nights get colder, I am keenly aware of three things:
1. It’s my busy season. No really, I know I say that all the time, but the holidays bring about a special kind of chaos that is simply unmatched at any other time during the year. And, being a workaholic, this means that I’m more stressed than usual (it’s a good kind of stress, I promise!), fighting to meet deadlines and balancing work and family life.
2. Meals around here are optional. Working around the clock means that I’m not always eating the way I should, which leaves me vulnerable to falling ill during cold and flu season. There’s a certain go-go-go attitude that propels me through the week, but when I’m down, I’m out for the count. Therefore, it’s incredibly important for me to choose healthier meal options and make eating regularly a priority.
3. When it’s cold outside, I crave comfort. While I’m multitasking and juggling and trying to survive the season, I’m also craving those cold-weather foods that bring me warmth and comfort. Spaghetti and meatballs. Chicken stew with dumplings. Spicy chili. And my very favourite, Stracciatella Soup.
Stracciatella (egg drop soup) is high on my list of comfort foods because it has a little of everything I love: a garlicky soup base, bright green baby spinach, creamy eggs and salty Parmesan cheese. In fact, whenever I feel myself coming down with a cold, I always crave this soup with a dash of hot pepper sauce. However, working around the clock leaves little time to make comfort food from scratch, but I’ve found a few EGGcellent hacks to make it in no time.
This recipe only calls for five (5) ingredients. If you always keep them on hand, you’ll always be able to make Stracciatella in a hurry!
INGREDIENTS
1L chicken stock
4-6 cloves of garlic, peeled
2 cups baby spinach leaves
1/2 cup EGG Creations Whole Eggs Original
Parmesan cheese, to taste
EGGcellent Hack #1: Infuse your chicken stock with garlic – and freeze! To fully appreciate the garlicky goodness of this Italian soup, you should really allow the garlic to simmer in the stock for about 60 minutes. But really, who has time for that? When I want this soup, I want it now. So, I make batches of garlic-infused chicken stock on weekends when I’m not as rushed (try a slow cooker!), and freeze it in 1L portions for later. The great news is that the frozen stock can be popped out of the container and into a large pot on the stove, and within minutes, your soup base is piping hot!
EGGcellent Hack #2: Use EGG Creations Whole Eggs. EGG Creations contain REAL eggs without any chemicals or preservatives. A lot of people hear the term “liquid eggs” and think “I don’t know what those are.” Guess what? They’re simply eggs that have been pre-cracked and pre-beaten for quick and convenient meals. That’s it!
Using EGG Creations, all you have to do is shake and pour to add fresh, pre-cracked, pre-beaten eggs to the gently rolling chicken stock. There’s no mess and no prep bowls to wash. Easy-peasy!
Immediately after adding the EGG Creations, toss in a handful or two of spinach and stir the mixture. As soon as the eggs are fluffy and the spinach wilts, your soup is ready to be enjoyed. Finish with a healthy sprinkle of Parmesan cheese, to taste.

Nope could not eat eggs that way, I never liked eggs growing up and it just been that last 10 years or so that I will now sometimes eat them, but they have to be hard liked a boiled egg, textures really affect me
