So, the cold weather is settling in and we’ll all start to mentally prepare for the long winter ahead. What better time to step up your breakfast game? We depend on coffee to get our days off to a great start. Okay, I’m not telling the whole truth: We depend on coffee to get our days started, period. And that’s why I truly believe that the best coffee maker is one that does the job simply, and does the job well. No fancy attachments, complicated brewing options or gimmicks! Just bold, flavourful coffee that is ready when I am.
Besides being an absolutely stunning, attention-grabbing red, the Hamilton Beach 12 Cup Programmable Coffeemaker features a programmable clock/timer with 2 hour auto shutoff; regular, bold and 1-4 cup brew options; a removable cone shaped filter basket; auto pause and serve feature and a non-stick hot plate.
Of course, if I’m going to enjoy freshly brewed coffee, it only makes sense that it should come from freshly ground coffee beans! The Hamilton Beach Custom Grind Coffee Grinder has a large 12-cup capacity in addition to a removable, dishwasher safe grinding chamber with a durable stainless steel blade. Its patented one touch, hands free operation means I simply need to select the number of cups and the type of coffeemaker (everything from percolators to espresso). Now I can’t think of a better way to start my day than a cup of coffee and a mug of celebration cake! And that’s exactly how my husband spent his 40th birthday this morning, thanks to a little ingenuity and just five minutes in the kitchen. The following recipe yields one serving because really, if you were going to make more than one serving, you wouldn’t be cheating and making mug cake!
1 tablespoon butter, softened
1 egg white
1/2 teaspoon vanilla extract
2 tablespoons granulated sugar
1/4 cup all-purpose flour
1 tablespoon vanilla or plain Greek yogurt
1 teaspoon baking powder
In a medium bowl, combine all ingredients and whisk until batter is just smooth, but do not overmix. (This is key, or you’ll yield a tough cake.)
Prepare a mug by spraying it very well with cooking spray and pour batter into the mug, taking care that there is plenty of room for growth. The batter/cake will nearly double in height in the microwave, so select a large mug and do not fill more than halfway.
Microwave on high for 90 seconds, or until done. Microwave cooking times vary widely and it could be done in 60 seconds, or it could take 2 minutes. Just camp out in front of your microwave to ensure it does not spill over. While the mug cake is cooling, make the glaze.
1 tablespoon butter, melted
1/4 cup powdered sugar
1/4 teaspoon vanilla extract
1 tablespoon milk (more for thinner consistency)
sprinkles!
Combine all ingredients (except for milk) in a small bowl and whisk, adding the milk based on desired consistency of glaze. Spoon glaze over the mug cake while it’s in the mug and allow glaze to soak and permeate the cake. Or, remove cake from the mug by running a knife around the sides, and invert it onto a plate and spoon the glaze over it. Add a few sprinkles and celebrate!
