I love lunch. No really, I absolutely, positively looooovvvveee it.
But why wouldn’t I? I always have Dempster’s Tortillas on hand, and simply put, they make EVERYTHING taste delicious. Leftover curried chicken – wrap it up. Miscellaneous cold cuts – wrap it up. Today’s lunchtime inspiration was derived from leftover grilled chicken breast. Normally, I’d throw the chopped breast in a soup or salad, but today I decided on a Grilled Chicken Wrap with Lemon-Basil Aioli.
(Hint: It was phenomenal.)
INGREDIENTS
2 Dempster’s 10-inch Tortillas
1 cup grilled chicken breast strips
1 cup baby romaine lettuce leaves
1/2 cup shredded mozzarella cheese
pinch red pepper flakes
1/4 cup low-fat mayonnaise
2 tbsp fresh basil, chopped
1 tbsp freshly squezed lemon juice
DIRECTIONS
Mix the mayonnaise, basil and lemon juice in a small bowl. Spread generously over the tortilla. Layer the lettuce, chicken and cheese, and sprinkle with red pepper flakes. Wrap it up! Serves 2.

I love wraps, like you said you can wrap just about anything. I also like putting my wraps in my George Foreman grill sometimes just for a toasty crunch to my wrap and the wonderful melted cheese…mmmm

I would rather a wrap than 2 slices of bread for a sandwich (the bread is just so filling, but it does have it’s place – like French toast or Bread Pudding LOL)
I will sometimes even use the leftover soft tacos (from the kits) as wraps if I don’t have any tortillas around ;)
Oh yum – I never thought to use soft tacos, but it would be just as delicious!
I love these ideas. They give me ideas for packing my lunches (I work 12 hour shifts so good, satisfying meals are important)

I love wraps and didn’t even think to use left overs in them…this looks like a healthy meal to me. I love chicken and often find myself stuck for ideas.
